Kapucínský chlebíček – Czech First Republic bourgeois delicacy

Kapucínský chlebíček is a light almond dessert that you can whip out in less than one hour. And it looks beautiful 😉

The Republic was young, the quality of life in the cities was rising and people started focusing more on enjoying life. Not all the people living in the cities could afford it but the middle and higher bourgeoisie sure did. And so, while poor people in the countryside still made traditional desserts such as the potato-based Patenty and for special occasions Koláče, the city people wanted new thing and had the time to invent new recipes.

Kapucínský chlebíček was one of these new recipes, besides being different from the humble countryside desserts, it also met the requirements of the higher class to have food that could impress with its looks. Kapucínský chlebíček is served with icing made with lemon zest.

This recipe uses baking powder, it rises fast and there’s no need to make dough starter like in so many Czech recipes. You can prepare the dough in less than 10 minutes, the baking time is then 40 minutes. If you need to whip out a dessert fast, this is a recipe for you.

Ingredients

Batter

  • 200 g/7 oz of granulated sugar
  • 100 g/3.5 oz of plain flour (hladká mouka – see Czech Flour Guide)
  • 1 package of vanilla sugar (about 8 g/0.3 oz)
  • 1/2 tsp of baking powder
  • 100 g/3.5 oz of bread crumbs
  • 1/2 tsp of ground cinnamon
  • 3 eggs
  • 150 g/5.3 oz of half almonds or chopped almonds
  • juice from 1 lemon

Icing

  • 150 g/5.3 oz of powder sugar
  • juice from 1/2 lemon
  • zest from 1 lemon

Other

  • elongated baking pan, around 30 cm/12 in
  • butter and bread crumbs to coat the pan

Kapucínský chlebíček

Whisk the eggs, granulated sugar, flour, vanilla sugar, almonds, baking powder, bread crumbs, cinnamon and lemon juice.

Coat the pan with butter and then bread crumbs so that the Kapucínský chlebíček doesn’t stick to the pan. Pour the batter in.

Preheat the oven to 180°C/356°F and bake for 40 minutes.

Meanwhile, mix the ingredients for the icing. Let the dessert cool down completely and pour on the icing.
