Czech Carrot Salad

Carrot salad has been popular not only in Czech households but for decades also in school cafeterias.

Czech cuisine has a few very typical and simple vegetable salads. Unlike the Cucumber salad or the Tomato salad, Carrot salad is prepared sweet, as fruit salad. While cafeterias tend to serve a cheaper version of the recipe, I would like to show you how our family prepares it. It’s based on finely grated carrot and the addition of three fruits and it’s simply delicious.

Growing up, the juice from the salad was the thing we liked the most and we always made sure that mom put enough of it in our small bowl that would be next to the plate with the main dish.

Typically, except for carrot, we would use fresh orange juice and finely grated apples but you can make alterations according to your taste. Someone likes to add pineapple for more exotic taste, others prefer to dice the apples rather than grating them.

Czech Carrot Salad – Recipe

Ingredients

  • 1 kg of carrots
  • 4 large apples
  • 4 oranges
  • juice from 1/2 lemon
  • optional: water

How to make it

Clean the carrots and grate them finely. Peel the apples, remove cores, grate finely and add to the carrots. Stir in juice from the oranges and the lemon juice. If you want, add a little water to have more  juice but I don’t do that. Let the salad get nicely chilled in the fridge and serve in individual bowls.
