Šišky s uzeným or potato dumplings with smoked meat are not just absolutely delicious. They are also easy to make and you can prepare a huge batch for your whole extended family.

Potato Dumplings with Smoked Meat
Ingredients
- 900 g/31,7 oz of potatoes
- 200 g/7 oz of flour – in Czech Republic typically large grain flour called hrubá mouka – here’s our Czech Flour Guide
- 100 g/3,5 of semolina or in Czech krupice
- 2 eggs
- 1 tsp of salt
- 500 g/17,6 oz of smoked meat, diced
- 2 large onions
- some butter or lard
Recipe
Boil the potatoes in peel until they are good to eat. It takes between 40 and 60 minutes but try pinching them with a fork before you switch off the stove. Let them cool down and peel them.
Grate the peeled potatoes manually, don’t use a blender or you will get a glue-like mass and you don’t want that!
Add the semolina, flour, salt and eggs. Mix everything well, it’s best to do this with your hands.
Boil water in a large pot. Roll out a thin rope from the dough and cut it into small pieces or just roll out small pieces directly. Put them in the boiling water until they float and then 5 minutes more.
While the potato dumplings are boiling, fry the smoked meat a little on some butter or lard and also chop the onions finely and fry them until they golden.
Take the potato dumplings out of the water and immediately mix them with the meat and onion. Serve hot and enjoy this wonderful Czech soul food!
