Celestýnské nudle are a delicious soup insert – noodles made from savory pancakes.
If you’d like to add a special twist to a traditional soup, Celestýnské nudle are a great option. They are easy and fast to make and you can customize them for your taste with different herbs. They are perfect for any of the Czech soups, you just put them on the table in a bowl and let everyone take their serving.
Ingredients
- 150 ml of milk
- 1 egg
- 70g of semi coarse flour (see Czech Flour Guide)
- pinch of baking powder
- pinch of salt
- pinch of nutmeg
- optional 1: herbs, I like finely chopped fresh parsley
- optional 2: butter or oil
Celestýnské nudle – Recipe
Whisk the egg in milk, add flour, nutmeg, salt and baking powder, whisk properly.
Now, we’ll be basically frying pancakes. Depending on your pan you’ll fry them on butter, oil or nothing. I’m using a special pan only for pancakes and there’s no need to grease it but sometimes I like to make celestýnské nudle on a little butter. This batch of batter is for two pancakes.
Pour half of the batter on the pan and spread it over the whole surface of the pan. Let it fry, flip it and fry again. Do the same for the rest of the batter.
Roll up the pancake, cut it into stripes 0,5 – 1 cm thick. You can leave them like this or cut them in half lengthwise.
Put the noodles in a bowl and you’re done. Remember, celestýnské nudle aren’t supposed to be boiled in the soup, you add them in your plate just before you start easting.
