Cucumber salad with a sweet-sour vinaigrette is a summer classic. It’s refreshing, healthy and very easy to make.
Known to many from anywhere from Sunday family lunches through school cafeteria, the cucumber salad is a real Czech classic in summer. In fact, cucumbers are so popular in the Czech Republic that there’s a whole season named after them. Approximately the two months of summer break are colloquially called okurková sezóna (cucumber season) and this expression is used to describe the period of time when journalists haven’t got much to write about.
Cucumber is also one of the most popular farming products and in about mid July, when the cucumbers are ready for harvest and small homestead farmers have way too many of them. This salad is a delicious and fast way to use this amazing vegetable.
Cucumber Salad – Recipe
When it comes to this salad, just add everything to taste. This is how I make it.
Ingredients
- 2 cucumbers
- 2 tbsp of vinegar
- 1 heaping tsp of sugar
- 1/4 tsp of salt
- pinch of pepper
How to make it
Peel and grate the cucumbers, add vinegar, sugar, salt and pepper and mix well. The cucumbers will release water but you can add even more if you’d like. Let the salad sit for 10 minutes before serving.
How to serve Cucumber Salad
Cucumber salad is best served cold and traditionally in small individual bowls, one per person, right next to the plate with main course. However, you can also prepare a large bowl and let everyone serve themselves.
