Walnut Rolls – Recipe
Supplies (about 50 pcs)
Dough
- 175 g/6.2 oz of plain flour
- 75 g/2.6 oz of powder sugar
- 100 g/3.5 oz of unsalted butter, softened
- 1 small egg
- 40 g/1.4 oz of ground walnuts
- 1/2 tbsp of cocoa
- small metal tubes for baking these rolls, alternatively, you can you the handle of a wooden spoon
- butter or vegetable grease for the tubes
Cream
- 100 g/3.5 oz of unsalted butter, softened
- 100 g/3.5 oz of powder sugar
- 70 g/2.5 oz of ground walnuts
- optional: 1 tbsp of rum or vanilla extract
Dip and sprinkle
- 100 g of dark chocolate
- 50 g of unsalted butter
- 2 handfuls of ground walnuts (can be mixed with powder sugar)
How to make Walnut Rolls
I a bowl, combine flour, sugar, walnuts and cocoa. Then add butter and egg and knead until you obtain a compact dough. Wrap it in a foil and refrigerate for 30 minutes.
Take a small piece of cold butter and using your hand, cover all tubes in butter to prevent the dough from sticking to them.
Dust your desk with flour and roll the dough out thin. Cut it into rectangles that are shorter than the tubes in length and a little wider than the circumference of the tubes. Mine are 6 x 4 cm/2.4 x 1.8 in.
Wrap each rectangle around a tube. Where the long edges meet, thy should overlap slightly so your rolls don’t come out open from the oven.
Preheat your oven to 190°C/374°F and bake for 12 – 15 minutes or until they are golden brown.
Take them off the tubes immediately, use a kitchen towel to hold the tubes, they are hot! Let them cool down.
If your rolls came out of the oven looking like this, it’s because there was too much dough. Next time, roll the dough out thinner.
To make the cream, whisk softened butter until fluffy, then add sugar and walnuts. You can also add rum or vanilla extract.
Fill your decorating bag with the cream and pipe it into the rolls. Fill them completely.
Let the filled rolls rest in the fridge for at least two hours, over night is even better.
Prepare a bowl with ground walnuts. Melt dark chocolate and butter in water bath. Dip both ends of the rolls in chocolate.
Then dip them in the walnuts.
I recommend letting the walnut rolls rest at least another day before serving.
