Pivní rohlíky are beer bread rolls. As the name suggests, one of the essential ingredients is beer.
Beer is one of the most common beverages in the Czech republic and it’s no wonder it’s found its way into the local recipes, including bread. If you wonder what rohlíky are, they’re small elongated bread rolls made from wheat flour, you can find the basic recipe here. Pivní rohlíky is a less common version but I prepare them probably more often because we all like the taste. I also make them in this long and thin shape but you can roll them just like shown in the basic recipe.
This is generally very variable recipe, you can also add seeds into the dough and as you can see, I sprinkle mine with large-grain salt and caraway seeds.

Pivní rohlíky – Recipe
Ingredients
- 500 g/1.1 lbs (3 cups) of semi-coarse flour
- 300 ml/0.7 lbs (1 cup) of beer
- 50 ml/0.1 lbs (3 tbsp + 1 tsp) of sunflower or rapeseed oil
- 1 egg
- 1 tsp of salt
- 1 tsp of dried yeast
- large-grain salt and caraway seeds for topping
- 1 tbsp of milk
How to make Pivní rohlíky
Warm up about half the beer just a little bit and stir in yeast. Cover and let it stand until you can see that the yeast is activated (it should take 10 – 15 minutes). This is the starter.
In a large bowl, mix flour and salt. Add starter, rest of the beer, oil and egg yolk and knead the dough until it’s smooth. Cover and let rise.
Place dough on a table sprinkled with flour and cut into 12 equal pieces. Form a small loaf from each piece, then roll it out flat into a square. Cut the square diagonally into two triangles.
Roll each triangle from the long side to the tip.
Place each rohlík on a baking tray with the tip down. Mix egg white with milk. Glaze each rohlík with the mixture and sprinkle with salt and caraway seeds.
Preheat the oven to 200°C and bake for 15 minutes.
