Svatomartinské rohlíčky

Svatomartinské rohlíčky with delicious walnut filling are prepared on November 11, the Day of St. Martin.

St. Martin’s Day is a fun holiday. Historically, it used to be the day of the first snow which also brought end to the farm staff service and the first wine of the season called Svatomartinské víno. Nowadays, many families prepare roast duck with cabbage and dumplings and also bake these delicious sweet treats called svatomartinské rohlíčky (St. Martin Crescents).

Svatomartinské rohlíčky – Recipe

Supplies:

Dough

  • 250 g/0.55 lb of plain flour
  • 125 g/0.28 lb of unsalted butter + some for glazing
  • 125 ml/0.28 lb of heavy cream or sour cream
  • 50 g/0.11 lb of caster sugar
  • pinch of salt

Walnut filling

  • 175 g/0.4 lb of ground walnuts
  • 50 ml/0.11 lb of hot milk
  • 55 g /0.12 lb of powder sugar
  • 1/2 tsp of ground cinnamon
  • 1 tsp of vanilla extract
  • 1 tsp of Czech rum

Other

  • Powder sugar

How to make Svatomartinské rohlíčky

Combine flour, salt and sugar in a bowl. Then add diced cold butter and scream and quickly knead the dough. It has to be done fast because we don’t want the dough to become warm. It might seem sticky at the end of the kneading but don’t add any more flour. Cover it and let it rest in the fridge while you prepare the filling.

Combine walnuts, sugar and cinnamon. Then stir in hot milk, vanilla extract and rum.

Take 1/3 of the dough, leave the rest in the fridge. Roll this piece thin into a circle.

Cut the circle into 8 triangles (equal, if can be, as you can see, I struggle with it).

Put 1 tsp of the willing at the wider edge of each triangle.

Start rolling each triangle from the wide edge towards the tip.

Leave the tip under and close the ends. Make each crescent a little round (to resemble a crescent).

Preheat the oven to 180°C/356°F and bake until the crescents start turning a little golden (around 30 minutes).

Take them out and immediately glaze with some butter.

Sprinkle with powder sugar and enjoy!
